BEEF AND CHEESE PITA PIZZA

Ingredients:

  • 150g Ground Lean Beef
  • 2 teaspoon extra-virgin olive oil (14g – divided)
  • 50g chopped onions
  • 25g chopped red peppers
  • 1 clove of garlic, minced
  • 1 teaspoon tomato paste
  • 2 tablespoons water
  • 1/2 teaspoon salt, (plus a pinch for the toasted pita)
  • 1/4 teaspoon ground black pepper
  • 1 pita bread
  • 45g low-fat mozzarella 

Instructions:

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Heat 1 teaspoon of the olive oil in a medium skillet over medium-high heat. Add the onion and the red pepper and cook, stirring occasionally, for 5 minutes. Add the garlic and cook for a minute longer.
  3. Add the tomato paste and cook, stirring for 1 minute.
  4. Add the ground beef, 2 tablespoons of water, salt, and pepper. Stir and cook until browned, for about 4 minutes.
  5. Remove from the heat and transfer the meat mixture to a plate.
  6. Wipe out the skillet and return to medium heat. Brush both sides of the pita bread with 1 teaspoon of olive oil and sprinkle with a pinch of salt, then lightly toast on the skillet, about 45 seconds per side.
  7. Arrange pita bread on a baking sheet and top evenly with the shredded mozzarella.
  8. Spoon the meat mixture over the cheese and place the baking sheet in the oven and bake for 5-6 minutes or until the cheese melts.
  9. Serve warm and enjoy.
