BEEF AND CHEESE PITA PIZZA
Ingredients:
- 150g Ground Lean Beef
- 2 teaspoon extra-virgin olive oil (14g – divided)
- 50g chopped onions
- 25g chopped red peppers
- 1 clove of garlic, minced
- 1 teaspoon tomato paste
- 2 tablespoons water
- 1/2 teaspoon salt, (plus a pinch for the toasted pita)
- 1/4 teaspoon ground black pepper
- 1 pita bread
- 45g low-fat mozzarella
Instructions:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat 1 teaspoon of the olive oil in a medium skillet over medium-high heat. Add the onion and the red pepper and cook, stirring occasionally, for 5 minutes. Add the garlic and cook for a minute longer.
- Add the tomato paste and cook, stirring for 1 minute.
- Add the ground beef, 2 tablespoons of water, salt, and pepper. Stir and cook until browned, for about 4 minutes.
- Remove from the heat and transfer the meat mixture to a plate.
- Wipe out the skillet and return to medium heat. Brush both sides of the pita bread with 1 teaspoon of olive oil and sprinkle with a pinch of salt, then lightly toast on the skillet, about 45 seconds per side.
- Arrange pita bread on a baking sheet and top evenly with the shredded mozzarella.
- Spoon the meat mixture over the cheese and place the baking sheet in the oven and bake for 5-6 minutes or until the cheese melts.
- Serve warm and enjoy.
