TURKEY MEATLOAF
Ingredients:
- 150g White Meat (Chicken Breast, Turkey Breast, Lean Pork), Minced
- 1 teaspoon extra virgin olive oil (7g)
- 40g Rolled Oats
- 1 whole egg
- 50g green beans
- 30g white onion diced
- 1 tablespoon sugar-free ketchup
- 1 teaspoon Worcestershire sauce
- ½ teaspoon baking powder
- ½ teaspoon dried parsley
- 30ml unsweetened low-fat almond milk
- salt and pepper to taste
Instructions:
- Preheat the oven to 425 F. Line a large baking sheet with tin foil.
- Place the rolled oats in a blender. Blend on high for 1-2 minutes until it becomes a flour-like consistency.
- Transfer the blended oat, ground turkey, white onion, extra virgin olive oil, Worcestershire, parsley, egg, baking powder, and milk with salt and pepper to a large mixing bowl.
- Combine the mixture in the bowl with your fingers until all ingredients appear evenly dispersed. Transfer the meat mixture to the prepared sheet pan. Form the meat mixture with your hands into the shape of a meatloaf.
- Bake for 15 minutes in the oven.
- After 15 minutes, add the green beans and spray lightly with oil and add salt and pepper. Bake another 15 minutes or until the meat is cooked through
- Remove from the oven and serve warm.
