SPICY PEANUT CHICKEN WRAP

Ingredients:

  • 100g boneless chicken breast
  • 7g crunchy peanut butter
  • 1tsp toasted sesame oil
  • ½ lime
  • ¼ tsp garlic powder
  • 1 tsp ginger (grated)
  • 1 Mission low carb wrap
  • 50g cucumber
  • 50g carrot
  • 30g lettuce
  • Pinch of salt
  • 1 tsp Chilli flakes

Method:

  • Boil, grill or bake the chicken breast and keep aside.
  • Put 7g crunchy peanut butter in a bowl and whisk in 1 tbsp just-boiled water.
  • Stir in 1 tsp grated ginger, garlic powder, chilli flakes, 1 tsp toasted sesame oil and squeeze ½ of lime juice.
  • Shred the cooked (boiled, grilled or baked) chicken breast and mix with the peanut sauce.
  • Add the chicken on to a wrap, top it with shredded carrot, cucumber and lettuce. Roll up and serve.
