ONE-POT CREAMY GARLIC NOODLES

Ingredients:

  • 125g low calorie, Slendier noodles, well rinsed
  • 150g boneless chicken breast
  • 1 teaspoon butter (7g)
  • 3 garlic cloves, minced
  • ¼ teaspoon paprika
  • 100ml almond milk 
  • 45g low-fat parmesan cheese
  • 20g fresh basil
  • Salt and pepper to taste

Instructions:

  1. Slice the chicken breast in half, season with paprika, salt, pepper, and grill each side for 4-5 minutes. Shred and keep aside.
  2. Meanwhile, cook the noodles according to package instructions.
  3. In a skillet, heat butter over medium heat.
  4. Then add garlic and cook for about a minute.
  5. Next add milk, noodles, shredded chicken, salt and pepper, and basil. Bring to a boil, stirring occasionally.
  6. Once boiled, reduce heat to a simmer stirring occasionally for 5-10 minutes.
  7. Stir in the Parmesan when noodle is cooked and add a little milk if necessary to reach your desired consistency.
