OATS EGG DOSA
Ingredients:
- 45g oats
- 30g rice flour
- 80ml canned coconut milk
- 1 teaspoon extra virgin olive oil (7g)
- 140ml water
- 10g rice (raw)/ 30g (cooked weight)
- ½ teaspoon instant yeast
- 1 whole egg
- 150g egg white
- ½ teaspoon sugar
- Salt and pepper to taste
Instructions:
- Add water to the oats and let them soak for 5-10 minutes.
- Cook the 10g of rice (30g cooked weight) and keep it a side.
- In a blender add the rice flour, cooked rice, coconut milk, sugar and the instant yeast. Pulse the blender for a minute and then add the soaked oats to the blender and blend again for another 2-3 minutes till the batter is smooth.
- Transfer the batter to a bowl and season with salt and pepper. Let the batter rest for approximately 30 minutes in a warm area.
- If the batter is too thick add a little more water.
- Now grease a nonstick pan and heat the pan in medium-high flame. Once the pan is hot, add 1 scoop of the batter to the pan and swirl the pan around to get a dosa shape. Now add the whole egg on 1 dosa. Add the egg white on top of the other dosas and sprinkle some salt and pepper on top.
- Cover the dosa and cook for about 2-3 minutes.
- Once the dosa is cooked carefully flip the dosa to the other side and cook for another 1 minute.
- Serve hot and enjoy!
