CHILI MANGO ZESTY QUINOA SALAD

Ingredients:

  • 65g quinoa or couscous (raw weight)
  • 50g spinach, chopped
  • 30g black beans, canned
  • 30g corn, canned
  • 10g grape tomatoes
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne
  • Salt and pepper to taste

Toppings:

  • 50g mango
  • 50g avocado

Instructions:

  1. Cook the quinoa or couscous according to package directions.
  2. While the quinoa or couscous is cooking, chop the spinach, slice the tomatoes, and cut the mango and avocado.
  3. Once the quinoa or couscous has finished cooking, mix all of the ingredients in a bowl except for the mango and avocado, then season with salt and pepper.
  4. Top the salad with slices of avocado and mango.
  5. Serve and enjoy!
